The red wine marinade is perfect for steak. The best thing is that you can buy cheaper cuts of steak, bash it with a meat tenderiser and marinated it. It takes no time at all to fry it or cooking through on the BBQ.
795g (1lb 12oz) rump steak (cut into 8 pieces) * 115ml (4 floz) red wine (or port) * 2 garlic cloves, crushed * 2 tsp dried oregano * 2 tsp dried thyme * salt & freshly ground black pepper
Trim the fat off the steak, cut them into two and then flatten with a meat tenderiser. Combine the wine (or port), garlic, herbs, salt and pepper in a bowl. Add the steaks and mix well with your hands. Cover and allow to marinate in the fridge, preferably overnight. Either cook on the barbecue or fry in a frying pan with oil for 2 minutes each side until cooked through.
