Quick & Easy Christmas Pudding with Brandy Butter

No faffing. You just mix the ingredients and cook in the microwave. It comes out perfectly. The brandy butter goes well with the mince pies too.

QUICK & EASY CHRISTMAS PUDDING

Serves 6-8
285g (10oz) mincemeat * 140g (5oz) fine-shred orange marmalade * 225g (8oz) molasses cane sugar * 4 tbsp black treacle * 3 eggs, beaten * 4 tbsp whisky * 115g (4oz) butter, frozen and coarsely grated * 225g (8oz) self-raising flour

Butter and line the base of a 1.5 litre/2¾ pint pudding basin with greaseproof paper. In a large bowl, stir in the ingredients together, adding them one at a time in the order listed, until everything is completely mixed. Tip the pudding mix into the basin and cover with a circle of greaseproof paper. Place the pudding basin on a plate and microwave on medium for 20-25 minutes until cooked. Check by inserting a skewer to see if it comes out clean. Leave to stand for 5 minutes then turn out. Serve with the brandy butter.
