A very light marinade for prawns and the chilli gives them a little kick. They cook in no time at all.
Makes 16 skewers
910g (2lb) raw king prawns, deshelled * 2 tbsp olive oil * 1 tbsp lemon juice * 2 garlic cloves, crushed * 1 red chilli, deseeded and finely chopped * 1 tbsp Cognac * salt & freshly ground black pepper * 1 lemon quartered and halved, to serve * 16 wooden skewers
Mix all the ingredients in a bowl and stir gently to completely cover the prawns. Allow to marinate for 10 minutes. Then thread prawns and lemon onto each skewer. Either barbecue for 5 minutes, turning halfway, until pink or lightly fry on a griddle pan.
