Perfect Roast Potatoes

The perfect roast potatoes are not just for Christmas. I now do these this way all year round.

Serves 6
1 x 340g (12oz) jar of goose fat * 2.5kg (5lb) potatoes * 2 tbsp semolina

Pre-heat the oven to 250°C/450°F/Gas 9. Put the goose fat into a large roasting tin and then into the oven to heat up for 20-30 minutes. The fat needs to be really hot.

Peel the potatoes and cut each one in half. Put the potatoes into cold, salted water in a pan and bring to the boil, and cook for 4 minutes. Drain the potatoes in a colander, then tip them back into the saucepan and sprinkle semolina over them. Put the lid on and shake the pan to coat.

Carefully put the potatoes into the very hot oil and roast in the oven for 50 minutes, until golden and crispy. Just turn them over halfway through cooking. Transfer to a warmed serving dish.
