I am asked to make these every year: my infamous mince pies with marzipan in them!
115g (4oz) plain flour * 115g (4oz) self-raising flour * 115g (4oz) butter, soft & cut into cubes * 1 tbsp caster sugar * finely grated zest of 1 lemon * 85g (3oz) marzipan cut into 12 pieces * 255g (9oz) mincemeat * 1 tbsp brandy, optional * icing sugar, for dusting
Pre-heat the oven to 200°C/400°F/Gas 6. Blitz both flours and the butter in a food processor until it resembles breadcrumbs. Pulse in caster sugar and lemon zest with 3-4 tbsp of water until it comes into a ball. Thinly roll out the dough on a floured surface. Cut out 12 lots of 9cm rounds and line a 12 hole bun tin. Cut out little stars for the tops with the excess pastry and leave to one side.
Roll each of the 12 pieces of marzipan into a ball and flatten, then put in the bottom of each pastry case. Mix the brandy into the mincemeat (optional). Put in a heaped teaspoon of mincemeat and pop a pastry shape on top. Bake for 12-15 minutes until golden, cool on a wire rack and sprinkle on icing sugar.
