STEVIA is a natural, healthier alternative to the artificial sweetener aspartame. It is grown for the sweetness of its leaves and is a genus of the sunflower family, which has no known unhealthy side effects. Whereas, aspartame is linked to anxiety, insomnia and mood swings.

Low Fat Ice-cream

Serves 4
3 eggs, separated * 8 tbsp stevia sweetener * 1 tsp vanilla essence * 255g (9oz) very low natural fromage frais

Whisk the egg whites until stiff, then fold in the stevia sweetener using a metal spoon. Beat the egg yolks with the vanilla essence and then fold in the egg whites using a metal spoon. Fold in the fromage frais.

Pour into a shallow freezer-proof container, cover and freeze, stirring every 30 minutes until the mixture is frozen. Store in the freezer until required. Before you are ready to serve, stand the frozen ice-cream for 10 minutes to soften a little.

N.B. Pregnant women, the elderly and babies should not eat raw eggs.
