Tomatoes are in abundance across Italy and my grandparents grew them in their garden. So when it was time to harvest the tomatoes in late Summer, they could be seen in crate boxes everywhere in the house ready for bottling into passata. I find the smell of ripe tomatoes absolutely amazing and being rich in minerals such as potassium, folate and lycopene are superfoods for a healthy diet.
455g (1lb) tomatoes – cherry or plum * 1/2 cucumber * 1 red onion * 3 tbsp chopped fresh basil * 1 tbsp olive oil * 4 tbsp white wine vinegar * salt & pepper
Cut up the tomatoes, cucumber and red onion into small chunks. Add the basil. Mix oil and vinegar together in a separate jug and pour onto the salad. Toss well with a little salt and pepper.
