Drinks for adults, children and teetotallers, perfect after a long walk on Boxing Day or any day. My hot chocolate is made with real chocolate and double cream. The mulled wine recipe comes out year after year and never fails me.
570ml (1 pint) full fat milk * 1 tsp ground mixed spice * 115g (4oz) dark chocolate * 125ml (4 floz) double cream, lightly whipped * cocoa, for dusting * 4 cinnamon sticks
Pour the milk into a small pan. Sprinkle in the mixed spice. Break the chocolate into squares and add to the milk. Heat the mixture on a low heat until the milk is just boiling, stirring all the time to prevent the milk burning in the pan. Pour into mugs. Top with the whipped cream, a dusting of cocoa and pop in a cinnamon stick as a stirrer, to give a sweet pungent taste.
75cl bottle red wine * 4 cinnamon sticks * 1 full rind of one orange * 85g (3 oz) caster sugar * 1 star anise * 5 cloves * 90ml (3 floz) Cognac brandy
Pour the wine into a large saucepan, then add the remaining ingredients. Bring to almost boiling point, but do not let boil. Serve or keep on a low heat to keep it warm. Serve to your guests in glasses with handles.
