RANCH DRESSING: 2 garlic cloves, crushed * 225g (8oz) mayonaise * 115g (4oz) sour cream * 2 tbsp parsley, chopped * 2 tbsp dill, chopped * 2 tbsp chives, chopped * ¼ tsp paprika * 60ml (2 floz) milk * 1 tsp Worcestershire Sauce * ½ tsp white wine vinegar * 1 lemon, juice and rind * salt & freshly ground pepper
SALAD: 2 large carrots, grated * ½ white cabbage, shredded * 1 courgette, grated * 1 red onion, sliced * ½ red chilli, finely chopped
Make the dressing by mixing all the ingredients in a large bowl. Mix in the vegetables with the dressing. Cover and chill in the fridge for 2 hours before serving.
