Halloumi with Chilli & Vegetables Kebabs

I always serve these at my soirées, as they look colourful, they are ideal as the main dish for vegetarians and my husband loves halloumi cheese.

Halloumi with Chilli & Vegetables Kebabs

Makes 8 skewers
MARINADE: 200ml (7 floz) balsamic vinegar * 30ml (1 floz) olive oil * 2 tsp ground cumin * 2 red chillis, deseeded and finely chopped * 4 garlic cloves, finely chopped * salt & freshly ground black pepper

SKEWERS: 2 courgettes, cubed * 2 red peppers, deseeded and cut into bite-size pieces * 2 yellow peppers, deseeded and cut into bite-size pieces * 2 red onions, peeled and cut into bite-size pieces * 395g (14oz) halloumi cheese, cut into bite-size pieces * 1 lime, for serving * 8 wooden skewers, soaked in water

Make the marinade by mixing all the ingredients in a bowl. Then thread all the skewers with courgettes, peppers, onions and halloumi. Brush most of the marinade over the skewers and allow to marinate. Grill the skewers under a medium-heat grill, turning and adding more marinade occasionally. Grill for 5 minutes or until cooked. Squeeze lime juice over the skewers before serving. Alternatively, cook over a barbecue, until cooked through.

Ideally served with Flatbreads, Goat’s Cheese & Lentil Salad and Sweet Chilli Jam.
