Cuba Mojito


This is the most thirst-quenching of drinks for the summer. It’s on my cocktail list at my Club Tropicana bar, namely because it is a firm favourite of my friends Helen, Louise and Duncan.

Serves 2 or 1 long one
2 tsp caster sugar * 1 lime, cut into 4 wedges * fresh mint, 4 sprigs * 115ml (4 floz) white rum * 470ml (15 floz) soda water * 2 scoops crushed ice * lime wedges, to serve

Put 1 tsp of sugar into each of 2 glasses. Squeeze the juice from the lime wedges into each glass and drop them in. Add 2 sprigs of mint to each glass. Use a spoon or a muddler to mash the sugar, lime and mint together in the bottom of the glasses.

Fill each glass about half full with crushed ice and pour in the rum equally into each glass. Fill the glasses up with soda water, stir and garnish with the additional lime.
