The perfect starter to make ahead. Prepare the salad and cheese with honey & walnuts beforehand and refrigerate. Grill the cheese moments before sitting down to eat.
SALAD: 6 red dessert apples, cored and cut into chunks * 6 celery sticks, cut into chunks * 85g (3oz) walnut pieces * 6 x 140g (5oz) mini brie * rocket salad leaves * 6 tsp honey * 12 whole walnuts
DRESSING: 4 tbsp cranberry sauce * 3 tbsp extra virgin oil * 6 tbsp apple juice * 2 tbsp red wine vinegar * 1 tsp wholegrain mustard * salt & freshly ground black pepper
Make the dressing by mixing all the ingredients in a bowl. Transfer half the dressing into another bowl. Put the apple, celery and walnut pieces into this dressing and toss them together so that all the pieces are coated.
Pre-heat the grill to medium high. Spread 1 tsp of honey over each mini brie and put two whole walnuts onto them. Put each cheese onto a baking tray covered in greaseproof paper. Grill the cheeses for 3-4 minutes until they start to melt and become soft. They should still be intact. Meanwhile, arrange rocket around the edge of individual heat-proof serving dishes, allowing space for the brie. Share out the apple and celery mixture onto each plate, on top of the rocket. Carefully place each cheese in the space, pouring the remaining dressing over them and serve immediately
