BANANAS contain high amounts of rutin, a compound that complements the activity of vitamin C, and helps to maintain strong, flexible blood vessels. Rutin also possesses antioxidant, anti-inflammatory and anti-cancer properties.
2 tsp stevia sweetener * 2 egg whites * 3 x 150g toffee yogurt (or Danone Light and Fit Caramel Toffee) * 255g (9oz) quark, * 1 tsp vanilla essence * 2 bananas, sliced * 4 tbsp fat-free natural fromage frais * 4 gingernut biscuits, crushed * rind of 1 orange, cut into slivers
Put the stevia sweetener and the egg whites into a large bowl and whisk until light and fluffy. In another bowl mix together the toffee yogurt, quark and vanilla essence until completely mixed. Very gently, fold the egg whites into the toffee yogurt mix. Divide the banana between 4 dessert glasses. Spoon the toffee yogurt mix on top and chill for 3 hours.
Spoon the fromage frais onto the mousses, sprinkle over the biscuits and some slivers of orange strips. Serve.
N.B. Pregnant women, the elderly and babies should not eat raw eggs.
